Why the visit starts under the counter

Because that is where a large share of these end. Each induction position has a power board beneath it, those boards make heat, and a fan pulls air through the cabinet to remove it. In a sealed island in a Miami kitchen there is often nowhere for that air to come from, and the cooktop then shuts a zone down every time it is worked hard.
